The APAX LAB Box Set holds the three core profiles: Tonik for brightness and juicy acidity, Jamm for richness, sweetness and a creamy body, and Lylac for floral, silky, delicate cups. Each is a mineral concentrate you add to your brew water to push the coffee in one direction.

Blend by ratio, per coffee

APAX numbers the profiles Tonik [1], Jamm [2] and Lylac [3] so recipes read as simple ratios, for example 2/1/1 per litre of water. You mix to suit the coffee in front of you, more brightness for a washed lot, more body for a natural, and scale exact weights with APAX LAB’s recipe calculator.

Two sizes to choose from

The 3 x 100 ml set makes roughly 450 brews in total; the 3 x 20 ml Nano set makes around 90 and fits a travel or training kit. Built on demineralised, distilled or RO water at 3 to 4 g per litre, or dosed a few drops at a time into a finished cup.

The APAX LAB Box Set is a three-bottle kit of water-mineral concentrates, each made from demineralised water and analytical reagent grade (AR) minerals. Rather than one fixed water recipe, it gives you three directions you can use on their own or blend. Since water is around 98 percent of a brewed coffee, its mineral content is a major factor in how a coffee extracts and how its flavours land, and this kit puts that control in your hands.

The three profiles target different things. Tonik builds on magnesium and calcium chlorides with sodium and potassium bicarbonates to lift acidity and add a crisp, juicy brightness. Jamm leans on calcium and bicarbonate to bring richness, depth and a creamy sweetness. Lylac draws on sulfate and potassium to underline floral, delicate notes with a silky finish. APAX numbers them Tonik [1], Jamm [2] and Lylac [3], so shared recipes read as ratios such as 2/1/1 or 2.5/0.5/1 per litre.

There are two ways to use them. To build your brew water, start from a demineralised, distilled or RO base and add 3 to 4 g of total concentrate per litre; if you blend more than one profile, the combined total stays in that range. APAX LAB’s online recipe calculator turns a target ratio into exact weights. To season after brewing, dose a few drops directly into a finished cup and taste each profile against an untreated one. Shake each bottle before use.

Two honest points. These are minerals, not flavourings; they change how existing flavours are perceived, and they work best on a clean demineralised base rather than the hard tap water common in Cyprus. And do not add them to an espresso machine’s tank, since they are scale-forming; dosing a few drops into espresso already in the cup is fine. The modular approach also carries a small learning curve: if you would rather a fixed, ready result, a single profile like Nemo AeroPress removes the blending.

The Box Set suits brewers who want to dial water per coffee, cafes standardising water across origins, and anyone teaching or competing. The 3 x 20 ml Nano version covers the same ground in a compact format for travel and training.

How to use

Shake each bottle well.
In your brew water: on a demineralised, distilled or RO base, add 3 to 4 g total per litre, blending profiles to a ratio (start around 2/1/1).
After brewing: add a few drops per 200 ml cup and stir.
