Lylac [3] harnesses sulfate and potassium to underline the delicate, floral side of a coffee, with an elegant, silky mouthfeel. It suits clean, aromatic coffees where you want to lift the top notes.

Water chemistry, not flavouring

It changes the mineral balance of your brew water rather than adding aroma to the cup. Dose 3 to 4 g per litre onto a demineralised, distilled or RO base, or add a few drops to a finished 200 ml cup.

A little goes a long way

You only need 3 to 4 grams per litre of water, or a few drops in a finished cup, so a 100 ml bottle covers around 150 brews.

APAX LAB Lylac 100 ml

Lylac [3] is a water-mineral concentrate from APAX LAB, made from demineralised water and analytical reagent grade (AR) minerals. It is the floral, aromatic profile in the range, drawing on sulfate and potassium to underline delicate top notes and lend an elegant, silky mouthfeel. Its composition builds on magnesium sulfate, magnesium chloride, potassium chloride, potassium bicarbonate, sodium bicarbonate and sodium chloride.

It is most rewarding on clean, high-clarity coffees with floral or tea-like character, where it lifts and refines aromatics rather than adding weight. It works well with Ethiopian coffees and Geishas, and generally improves the aftertaste. Where Jamm [2] builds body and Tonik [1] sharpens acidity, Lylac works at the delicate end, so it is often used in small proportions within a blend to add lift without overwhelming.

There are two ways to use it. To build your brew water, start from a demineralised, distilled or RO base and add 3 to 4 g per litre; Lylac is numbered [3], so recipes read as ratios such as 2/1/1 (Tonik/Jamm/Lylac) per litre, scaled with APAX LAB’s online calculator. To season after brewing, add a few drops per 200 ml cup and taste against an untreated cup. Shake before use.

Two honest notes for the range: these are minerals, not flavourings, and they perform best on a clean demineralised base rather than the hard tap water common in Cyprus; and they should not go into an espresso machine’s tank, as they are scale-forming. A few drops into an espresso already in the cup is fine.

How to use

  1. Shake the bottle well.

  4. Use sparingly in blends to lift aromatics without flattening body.
