Nemo is a limited-edition water-mineral concentrate from APAX LAB, developed with Nemo Pop, winner of the 2025 World AeroPress Championship in Seoul ahead of 65 other national champions. It bottles the exact water profile from his winning routine, built in-house over months of testing, and is made from demineralised water and analytical reagent grade (AR) minerals like the rest of the range.
Unlike the modular APAX profiles, Nemo is a fixed, single recipe. There is nothing to blend or measure against other concentrates: it delivers one specific outcome, a cup that is sweet, structured and velvety, with a round, heavy mouthfeel, controlled acidity and clear flavour definition, while still letting origin character show. That makes it the simplest entry point in the range for anyone who wants a competition-tuned result without building their own water recipe.
It is tuned for AeroPress but works on any brewed coffee, and there are two ways to use it. To build your brew water, add 3 to 4 g per litre to a demineralised, distilled or RO base. To season after brewing, add 2 to 3 drops per 200 ml cup and adjust to taste. Shake before use. As with the whole range, keep it out of an espresso machine’s tank, since it is scale-forming; a few drops into an espresso already in the cup is fine.

How to use
- Shake the bottle well.
- In your brew water: add 3 to 4 g per litre to demineralised, distilled or RO water.
- After brewing: add 2 to 3 drops per 200 ml cup and stir.
- Adjust to taste; no blending needed.
