Tonik [1] raises the perceived acidity of your coffee, adding a crisp, juicy lift. Think of it as a squeeze of citrus on a dish: it sharpens flavours that are already there rather than adding any of its own. Best on coffees that taste heavy or a little dull.

Water chemistry, not flavouring

It works by changing the mineral balance of your brew water, built on magnesium and calcium chlorides with sodium and potassium bicarbonates. Dose 3 to 4 g per litre onto a demineralised, distilled or RO base, or add a few drops to a finished 200 ml cup.

A little goes a long way

You only need 3 to 4 grams per litre of water, or a few drops in a finished cup, so a 100 ml bottle covers around 150 brews.

APAX LAB Tonik 100 ml

Tonik [1] is a water-mineral concentrate from APAX LAB, made from demineralised water and analytical reagent grade (AR) minerals. It is the brightness profile in the APAX range, formulated to enhance the vibrant acidity of a coffee and give a crisp, intense, juicy character. Its composition builds on magnesium chloride, calcium chloride, sodium chloride, sodium bicarbonate and potassium bicarbonate.

The effect is comparable to adding a dash of salt and a squeeze of lime to a dish: it intensifies and defines flavours that are already present rather than introducing new ones. That makes it most useful when a coffee tastes flat, heavy or short on acidity, and it pairs naturally with washed coffees and bright origins such as Ethiopian and Kenyan lots. Overdosed, it can push acidity too far or add a saline edge, so build up gradually.

There are two ways to use it. To build your brew water, start from a demineralised, distilled or RO base and add 3 to 4 g per litre; Tonik is numbered [1] in the APAX system, so shared recipes read as ratios such as 2/1/1 (Tonik/Jamm/Lylac) per litre, and APAX LAB’s online calculator turns a ratio into exact weights. To season after brewing, add a few drops per 200 ml cup and taste against an untreated cup. Shake before use.

Two honest notes, the same as the rest of the range: these are minerals rather than flavourings, and they work best on a clean demineralised base instead of the hard tap water common in Cyprus; and they should not go into an espresso machine’s tank, since they are scale-forming. Dosing a few drops into an espresso already in the cup is fine.

How to use

  1. Shake the bottle well.
  2. In your brew water: add 3 to 4 g per litre to demineralised, distilled or RO water.
  3. After brewing: add a few drops per 200 ml cup and stir.
  4. Adjust to the coffee; ease off if acidity turns sharp or saline.
